Sugarcane farming has been practised in India since the Vedic era. The cultivation of sugarcane is first mentioned in Indian texts from 1400 to 1000 B.C. It is now largely acknowledged that India is the land where the original Saccharum species originated. Jaggery, a natural sweetener and a good source of nutrients, is becoming popular as a "healthy" replacement for white sugar. This chemical-free jaggery powder (Shakkar) is a versatile substitute for refined sugar.
Farmers that make jaggery crush the organically grown sugarcane using rollers to preserve up to 80% of the juice. The juice is collected in tanks or other containers for sedimentation to remove the light and heavy particles. It is then poured into the boiling pan. To ensure that no natural minerals are lost, vegetable clarifying agents like okra, semul, or castor is utilised in this case. Jaggery is boiled to get the desired texture and extend the syrup's shelf life. After being partially cooled, the mixture containing the grains is transferred from the pan to an aluminium tray and severely crushed with wooden or stainless steel grinders to create granules. The granules are prepared, dried, and sieved to create high-quality granular or powdered jaggery. The finished jaggery powder is then packaged and delivered.
