Millet Khichdi
Ingredients
- Foxtail Millet – 1/2 cup
- Moong Dal/Toor Dal – ½ cup
- Water – 2.5 Cups
- Mixed Veggies – 1 Cup (Carrot, Beans, Peas, Capsicum)
- Methi Leaves – 1/4th Cup
- Tomato (deseeded) – 1 (optional)
- Ghee – 1 .5-2 tbsp
- Ginger (grated) – 1 tsp
- Jeera – 1/2 tsp
- Red Chilli Powder – 1/4- 1/2 tsp (acc. to taste)
- Turmeric – a pinch
- Salt to taste
- Garam Masala – 1/2 tsp (optional)
Method
1. Wash millets and dal thoroughly until water runs clean, Soak for 1 hour.
2. Heat a pressure cooker, and add ghee, once the ghee is hot add jeera and allow them to splutter. Saute ginger until a nice flavour emerges. Add all the veggies including the tomato.
3. Saute on a medium flame for 2-4 minutes.
4. Add red chilli powder, turmeric powder, and garam masala along with salt.
5. Cook until tomatoes turn mushy.
6. Add soaked millets and dal, and sauté for 2-3 minutes.
7. Add water.
8. Pressure cook on a medium flame for 2-3 whistles.
9. Serve hot millet khichdi by adding a tsp of ghee with curd & pickle
